1 pound fingerling potatoes, sliced in half lengthwise
1 tablespoon extra virgin olive oil
1⁄4 teaspoon aromatic salt

DIRECTIONS

This is a fantastic side dish to prepare during Spring, the option of colorful potatoes can give a very Easter Egg themed meal!

Prepare oven according to Mugnaini’s Medium Roasting Environment, 550 – 625˚F

Place potatoes on a sheet pan and toss with oil and salt. Place into oven and roast for 25 to 28 minutes or until soft and browned.
