1 bag fresh cranberries, 12 ounces
1⁄2 cup sugar
1⁄2 teaspoon orange zest
1⁄3 cup orange juice
1⁄4 teaspoon grated ginger
1⁄4 teaspoon cinnamon


Prepare oven according to Mugnaini’s Medium Roasting Environment, 550 – 625˚F

Combine all ingredients in a small bowl, stir to combine. Allow to sit for 15 – 20 minutes, stirring occasionally to dissolve most of the sugar. Place on a 1/4 sheet pan and place into oven. Rotate pan and stir occasionally.

Cooking time during perimeter burn: 3 minutes


Cooking time for Roasting Oven Environment: 5 – 6 minutes.

Recipe doubles well.
