  • In the 1990s Mugnaini worked with engineers to duplicate the legendary performance of our masonry built pizza ovens using refractory castables and building them on metal stands. By building the ovens in our factory we are able to maintain high standards of craftsmanship and take full advantage of the quality materials available in the US. Mugnaini ovens ship fully assembled in a contractor friendly form for easy build outs. However, if access is an issue we can ship the oven in kit form.

    All Mugnaini Series ovens are fully assembled in the Mugnaini factory in Watsonville, CA. We use only the Valoriani modular oven core inside every Mugnaini built oven.

    The Valoriani oven of your choice is built on top of a refractory castable base - NOT insulation board - and covered with a three layer mixture of ceramic wool blanket, clay aggregate for additional thermal mass and perlite to stop the conduction of heat.

    No other oven on the market offers as sophisticated an assembly as the oven builders at Mugnaini.

  • Our commercial oven components are available in masonry kits for a traditional assembly using concrete, block and sand. Following our building guidelines will provide the proper thermal mass and insulation required to cook all day long and even the next morning! Flexibility in design, a permanent installation and customization are a few reasons to build with a masonry kit.

    Traditionally masons built wood-fired ovens using materials available locally. Stone and concrete has long been the material of choice due to its strength and longevity. Using masonry methods for building the structure that houses the oven allows one to create any shape imaginable. The only downside is the overall weight, size and cost of the project. We provide three templates incorporating our design parameters that ensure proper cooking dynamics. You can design the exterior of your oven any way you choose, provided the proper thermal mass and insulation space is included in your design.

  • Refrattari Valoriani creates history again with the Verace! Massimo Valoriani spent 5 years developing this oven in partnership with the principals of AVPN in Naples. The revolutionary RHS system recirculates the exhaust gas to create a floor that never loses temperature. Available in 120 cm and 140 cm with the exceptional Spitfire Burner System. NOTE: The Valoriani Verace is recommended and approved by AVPN as an exception to its regulations.
