Roasted Italian Sausages with Fresh Grapes
Roasting Oven Environment
1 – ½ pounds Italian sausage with fennel seed (spicy or mild)
3 cups seedless grapes
Juice of one lemon or to taste
Set pan with sausages into wood-fired oven and cook for about 10 minutes turning to brown evenly. Once browned, pierce with the tip of a knife in a few places and continue to cook for another 5 minutes.
Remove pan from oven and place sausages onto a warm plate. Cover and set aside. Remove all but a tablespoon of the fat from the pan and add the grapes. Set pan back into hottest part of the oven and cook quickly, stirring a few times until some of the grapes soften and collapse. Remove and add lemon juice and sausages. Stir and taste.
